Summer is officially here – and so is the desire for quick, healthy, on-the-porch snacks! This Creamy Avocado Dip fits the bill, and once you prepare it, you’ll agree that this is the go-to summer dip of the year.
This creation came to be over the Memorial Day holiday. Poolside, and feeling a tad peckish, Kyle cobbled together this dip with just a few ingredients. Once everyone gathered around the bowl to dive into the scrumptious snack-BANGO!-Creamy Avocado Dip was born.
This dip has the heart of guacamole, but has an extra creaminess to it thanks to the addition of Greek yogurt. The recipe is almost too simple to believe: avocado, lime juice and yogurt. Deliciousness can sometimes be quite that simple.
So, Kyle scratched down the 3-ingredient (OK, some salt & pepper too) recipe for us and I am forever grateful. It comes together in just a minute or so, with practically no effort – saving loads of time to mix up a gin cocktail to savor along with the dip. The recipe is vegetarian and gluten free, so fun for all of us!
What really took this dish over the edge were the dipping vessels Kyle added to the mix. He sliced some baby cucumbers, splashed them with a couple glugs of rice vinegar and finished them with some flaky sea salt. After the first bite, eyes were widened by the simple yet explosive flavor from the marinated cucumbers. Simplicity is the name of the game for this dip.
The marinated cucumber chips were refreshing and tart, the acidity from the vinegar really amped up the kick from the lime juice in the avocado dip. In fact, they pair well with a wide variety of salsas and hummus dips. To go a step further with the cucumbers, you can always throw them into a salad or just serve them as a side dish. In reality, marinated cucumbers are just speedy versions of pickles, and, around here, pickles are a HUGE favorite.
You can serve the dip with the marinated cucumbers and carrots to keep it completely gluten free. For our gluten-lucky friends out there, feel free to use tortilla chips or even toasted pita. You might need to stock up on avocados, lime juice and yogurt for the summer – this Creamy Avocado Dip is going to be a mega-hit!
- 2 medium avocados, ripe
- Juice from ½ a lime
- ¼ cup plain Greek yogurt
- Salt and pepper, to taste
- Paprika, for garnish
- To serve: cucumbers, cut into ½-inch thick slices, white wine vinegar, tortilla chips, baby carrots
- Slice the avocados in half, remove the pit, and scoop the flesh into a medium bowl. Add lime juice, yogurt, salt and pepper and mash with a fork until mixture is smooth. Taste and adjust seasoning. Garnish with a dash of paprika.
- To serve, sprinkle a dash of vinegar over the cucumber slices. Serve avocado dip with cucumbers, carrots and tortilla chips.
